Types of Food Spoilage – Full Detail

We can define food spoilage as any change that generates food undesirable to eat for a given population under ordinary conditions. The end result of a series of partial or complete breakdown reactions affecting one or all of the food components like fats, proteins and carbohydrates is definitely what food spoilage is about. It leaves a trail of decomposition products, along with the off-flavors and off-odors and, oftentimes, toxic products. All these changes and reactions do not happen all at once but they sum up to deteriorated food quite unfit for human consumption.

What are the different types of Food Spoilage?

Food spoilage may be any one of the following types: nutritive, aesthetic, and poisonous. An example of nutritive deterioration is the destruction of riboflavin in milk upon exposure to direct sunlight, day light or artificial light. This can be prevented if the milk is protected from light and stored in a refrigerator. Wilted lettuce and discolored fruits and vegetables, though not harmful to health, are considered aesthetically “spoiled” because of their appearance.

The most life-threatening type of food spoilage is food poisoning. It may occur as infection, ingestion of organisms in large amounts, or as intoxication, ingestion of the toxic products (toxins) of the organism. The most common cause of food poisoning is the production in foods of a toxin by the Staphylococcus aureus organism. The staphylococcus organism is a pus-forming bacteria commonly present in nature and ordinarily present on the surface of the skin, under the fingernails and in the nose, and throat. For growth, it needs food, air, and a warm moist environment. Gastrointestinal symptoms like abdominal cramps, diarrhea, nausea and vomiting usually develop within 2 to 4 hours after eating.

Botulism is more dangerous type of food poisoning. This is caused by the ingestion of the toxin produced by Clostridium botulinum. When the organism is allowed to grow in food, it produces a powerful toxin during its development. Ingestion of even small doses of this toxin causes serious illness within 24 hours. The nervous system is affected and death usually results from respiratory failure. Since the organism grows only in the absence of oxygen, botulism usually implicates improperly canned foods such as meats and low-acid fruits and vegetables.

Salmonella infection accounts for numerous cases of gastrointestinal disorders. The Salmonella organism grows readily at room temperature, is inactivated at refrigeration temperature and is destroyed by heat. The organism grows best in low-acid foods like eggs, dairy products, meats, shellfish and poultry. Salmonella infection produces symptoms like nausea and vomiting, abdominal pains and diarrhea within 12 to 36 hours. The condition may be prevented by thorough cooking and immediate serving or refrigeration of perishable foods.

Streptococcal infection is due to ingestion of food contaminated directly or indirectly from discharges of nose and throat, abscesses of food handlers, or through sneezing or coughing of infected persons. Food commonly implicated are milk and milk products, partially prepared hams, baked custards and sausages. Pasteurization of milk and education of the public in habits of personal hygiene are preventive measures.

Chinese Tofu Recipe – Tofu With Chinese Sausage Recipe

Tofu is a food originated from China, and is made by coagulating soy milk. Tofu is low in calories, no saturated fat or cholesterol, and contain pretty high amount of iron. Besides, due to tofu is made by soy milk, it is high in protein as well. Tofu itself has very little flavor or smell. So it can be used to cook with any dishes or ingredients. However, also due to its blend taste, it is not easy to cook a nice, tasty tofu dish as well. In order to use tofu as main ingredient for the dish, one would need to be able to make the taste or essence of side ingredients to be blended into the tofu.

There are many different types of tofu in the market. One needs to choose the right tofu for right dish. For example, soft tofu is suitable for soup, dessert, and steaming, and firm tofu is more suitable for stir fry, or deep fried.

Here is one easy-to-follow Chinese tofu recipe


• 2 Chinese sausage (can get it from Asian market)
• 2 cakes medium firm tofu
• 1 spring onion, cut into 1 inch sections
• 1 red chili, thinly sliced
• 1/2 teaspoon salt
• 1 teaspoon soy sauce
• 0.8 cup water
• 3 cup cooking oil
• 1 teaspoon cornstarch dissolved in 1 tablespoon water
• Pinch of MSG


1. Put in the Chinese sausage into a steamer, steam for 12 minutes. Cut them diagonally into thin slices
2. Cut the tofu into 12 square pieces.
3. Heat up wok and cooking oil over medium heat. Fried tofu for 3 minutes until golden brown. Drain with paper towels and set aside
4. Heat wok and 1 teaspoon cooking oil. Stir fry spring onion and red chili for about 2 minutes. Add in salt, soy sauce, water and fried tofu. Stir and simmer for 5 minutes over medium heat
5. Add in Chinese sausages and cornstarch mixture. Stir well until sauce is thickened
6. Ready to serve

Pizzas – All The Many Ways To Cook

Pizza is certainly not a new invention and throughout the centuries it has been cooked in a few different ways. The very first “oven” used to cook pizza was actually a pile of hot rocks heated by an open fire and today, methods of cooking pizzas still use the very same principles.

The ancient Greeks cooked their flat breads called plankuntos outdoors on hot stones and topped them with fruits, nuts, and other vegetation for seasonings. A few hundred years later and the Romans added to the dish with olive oil and more herbs and spices.

After the first cheeses were made it was also widely used as a topping for pizza. Once the first pizzeria was opened in Naples, Italy in the early 1800s it featured an elaborate brick oven complete with a marble counter for preparing the dough and assembling the toppings.

Brick or stone ovens for pizzas provide a more traditional experience and they can be fueled by electricity, gas, wood, or a combination of the latter two. A wood fueled brick oven provides heat from all angles allowing the pizza to cook evenly all around.

Pizza stones go hand in hand with these types of ovens and they too ensure a uniformly cooked pizza.

You will find that many authentic Italian eateries and restaurants have brick ovens and pizza stones to cook their pizzas to perfection. At home, we bake our pizzas in an ordinary oven using either prepackaged dough or the homemade variety. Most of us simply do not have the needed to space to install a brick or stone pizza oven in the kitchen but we can still mimic the flavor making our own pizzas especially when using a seasoned pizza stone.

As outdoor kitchens become more and more popular so does the outdoor pizza oven. However, fortunately you do not have to install a brick oven on the patio to enjoy pizzas cooked outdoors if you have a grill. Cooking pizzas on the grill has also become an easy and common way to make this rather tasty food.

Grilled Barbeque Pizza Recipe

What You Need

  • 1 plum tomato, diced
  • 1 cup black beans, rinsed
  • 1 cup corn (about 2 ears worth)
  • 1 large prepackaged pizza dough
  • 2 tablespoons cornmeal
  • 1 pound whole wheat pizza dough
  • 1/2 cup barbeque sauce
  • 1 cup mozzarella, shredded

How to Make It

Preheat the grill to medium.

In a medium sized mixing bowl combine the diced tomato, the rinsed black beans, and the kernels of corn and toss to mix.

On a baking pan or sheet large enough for a 12 inch pizza, sprinkle the cornmeal evenly before stretching the dough across the pan.

Grill the pizza with the lid closed for about 3 to 5 minutes or until the crust starts to puff up and the bottom is lightly browned.

Flip the pizza over and coat the dough with barbeque sauce. Add the tomato mixture then the shredded mozzarella cheese.

Grill again with the lid closed for another 3 to 5 minutes or until the crust is light brown and the cheese is melted.

Serves 4 to 6

Not surprisingly, people find themselves rooting for a contestant. Inevitably, they also find themselves returning for more.

Of course there are some people who are fascinated with cooking shows because of the meal preparation itself. Dishes are seemingly prepared with the least bit of effort exerted. There are some people who find the chef hosts entertaining while other people find themselves fascinated by the high-tech cookware and tools. Many of the chefs featured in cooking TV shows have not received formal culinary education and this effectively inspires many viewers. The idea is this — if these chefs can create delectable dishes without formal education then people can also create amazingly delicious dishes while at home. If you are not a fan of reality TV or competitive cooking shows, you can still watch the regular cooking home shows where basically the theme is all about learning how to cook basic dishes. Often, the host chef will teach you how to whip up delicious meals within minutes. Often the network banks on the personality of the host chef to attract viewers and drive ratings.

If you want to learn how to cook fancy dishes, there are cooking TV shows that feature gourmet chefs who will teach you how to create simple haute cuisine dishes. This is a nice way of attracting people who would like to sample 5-star restaurant dishes, but are hesitant to waste hundreds of dollars on a meal. These kinds of shows can be complicated because the recipes are not simple. Usually, these ingredients are not easily available. You would likely wonder, “Where can I possibly get these ingredients?” However, a good host chef will give you ideas where to find the ingredients or what alternatives you can use in case you can’t find a particular ingredient.

The bottom line is that there are several cooking TV shows available for everyone. You can always choose which show you prefer. One thing you are assured though from these shows is that you will learn and you will be entertained.
